Stuck trying to add product options with inventory levels

I’ve been trying all week to upgrade our product options on the product page.
We sell fine jewellery, most of it is made to order. I’m trying to implement a variant style section that links to products.
Example, We order gemstones for specific rings. I want to be able to upload the gemstones as products (free or more on higher quality bigger carat etc..) And link those products to the ring itself in metafields. I have everything sorted with size, metal karat & designs, But i need to link the gemstone product as an option to add to the ring whilst tracking the gemstones inventory so when it sells, It’s unavailable for that ring and any other rings it might be used for.
Seeking any advice, I’ve played with some apps, None of which can link specific products as an option.
I’m using the prestige theme.

You would not find a app link this, based on what i understand it can be custom coded.

Agree with Anthony here, you need custom code here to update your theme code to adapt to variants. Would need a developer for this change.
