I was able to troubleshoot and fix my issue myself it was related to Printify making changes to their product uploader. I did notify Printify of the issue. Below is the letter that I sent them which explains everything. If you are having issues with your color swatches working on new products that you are uploading from Printify then this is most likely the issue you are having. You will need to manually change the variant label to match the old code or you will need to update all your old products and the code in your css and liquid files to match the new label. Hope this helps anyone with the same issue.

Recent Changes to Printify’s Product Uploader: A Concern Regarding Variant Label Alterations
I am writing to address an issue that has significantly impacted my operations over the past few days. It pertains to a recent update in the Printify product uploader, where the label for T-shirt variants was modified from “Color” to “Colors”.
Initially, this change went unnoticed, which led to a perplexing situation when I was adding new products to my store. The color swatches for these newly added items were not functioning as intended, which was in stark contrast to their flawless operation with previous products.
This unexpected challenge necessitated several hours of troubleshooting. After an exhaustive review, I discovered the root cause: the alteration of the variant label from “Color” to “Colors”. This seemingly small modification had a significant impact, as it disrupted the coding for my store’s theme and rendered the color swatches non-functional for all new products.
Moreover, this change implies that each time I edit a product, I am now required to manually adjust the variant label post-upload. This adds an extra step to the process, increasing complexity and reducing efficiency.
I understand that continuous updates and improvements are inherent to maintaining a dynamic platform like Printify. However, I kindly request that the potential downstream effects of these changes on your customers be taken into account. Even minor alterations can have profound implications, as they may disrupt established coding on our end, resulting in unexpected operational challenges.
This recent experience caused significant inconvenience, and I believe I may not be the only customer affected by this issue. I kindly urge you to consider the potential ramifications on your customers before implementing changes that, while seemingly minor, can lead to significant complications.
Thank you for your understanding and for considering this feedback in your future updates. I believe this consideration will greatly enhance the user experience and minimize potential disruptions for your customers.
