Our products are currently setup to where they are all individual products listed on shopify. Even though we have products that include color options, in shopify each product is listed separately. I am wanting to change our products from all being separate, to having the color options as variant options under one product. I am just wondering if there is a big change that would come from having product listed as variants instead of each being its own product?

Yes, actually there may be liquid change needed in the theme file and major change may to show variant specific images only

If these colors will be used as product option then it will be single product and all media/images will be added on single product. There will be changes required to show variant specific images like images for black variant, images of yellow variant and so on…
