Is there a way to sync my Shopify conversion tracking settings with my Google Ads tracking? Google Ads is only showing 40-50% of my actual orders/sales.

Google Ads, can not track actual orders. Google ads can only track sales from orders after an ad has been clicked.
For example if the consumer, never clicked on an ad, then makes a purchase on your website, you would never want to attribute that to Google Ads, as it never came from Google Ads.
If you want kind of global tracking, you need to use a different system, but it will be expensive, for example use https://www.northbeam.io/
As I work with SMBs I would never use such tools as it is too expensive, and not much value. But it is maybe good for big companies.
