Taxes on some bills but not all

Hello there!
I´m about to open my shop soon as I just transferred from Etsy.
Now to have legal bills I need to have the tax of 19% showing on the bills for Germany, but for other countries it´s not legal to show tax on the bill, so how do I do it?
Currently I seem to only find the option to mark taxes in bills for all or no countries at all.

Basically, to add the taxes for the specific countries, you need to go to Online store >> Taxes and duties >> and set the settings according to your needs.

You can add the 19% taxes or whatever you want for the specific countries then you need to follow these steps.

Go to Shopify Admin >> Settings >> Taxes and Duties >> Click any country where you want to add the taxes >> Apply the taxes.

Shopify’s default tax setup applies the same rule storewide unless you customize it.
The fix is to enable tax overrides by region.

Go to Settings → Taxes and Duties, and set Germany to charge 19% VAT.

For other countries, uncheck “Include tax in price” or set the rate to 0%.

If you’re VAT-registered, also enable “Collect VAT on sales to the EU” and add your VAT ID. Shopify will then automatically remove the tax for non-EU destinations.
