This will ensure that Shopify does not add VAT on top of your product prices.

The easiest way is to download all your products as SCV , change prices there and then upload them back into Shopify. Make sure you keep the original CSV , just in case. That method also allows freezing prices for separate markets and do many other wonderful things.
