I have my website’s colours set for text to be white. Why then does my Dawn themed store add black text when I add a new image + text section?

I found another section able to be added (image w text) that provided allowed me to select colour so my problem is fixed. I still don’t understand why the global font, colour settings aren’t the default for new sections added but I’ve got what I need for now.
