We pay $2000 monthly for Shopify and as far as I can tell there is now no way to speak to a human at Shopify.

Ah, I believe that it is not removed but hidden rather.
To force the system to give you a human, log into the Help Center and type a generic question like “billing issue” into the chat. When the bot provides an automated answer, click “I still need help” or type “Contact Support.” You may need to reject the AI’s advice twice. Once the bot “fails” to resolve your query, it will finally reveal the Phone and Chat buttons.
