You can certainly customize the text that’s found on the email that customers receive when they purchase gift cards. This can be done in the Notifications section in your Settings. You can follow the steps below to customize it.

In your Shopify admin, go to Settings > Notifications.

Click Gift card created.

You can edit the following lines:

Click Save.
- If you wish to preview the changes, you can click the Preview button at the top of the page.
As you can see, notification templates use liquid variables to pull up the customer or order-specific necessary information needed in the notification or email. You can simply change the plain text without touching the liquid variables, but if you wish to customize the variables, you can refer to this page to do so or hire a Shopify Expert to do the customization for you.
