Yes this is quite possible you could use user level tracking in Google analytics. To be able to use this.
To set up User-ID, you must first enable the feature in your Analytics account (Editor role required), and then modify your tracking code. Learn more
You can verify your setup by checking the data in the User-ID Coverage report.
You could also try https://apps.shopify.com/m-analytics? They have a plan that enables this for you to get granular details on the user and user interaction

Google analytics are does not allow me to see user by user, so, it is not an option.

Actually Google Analytics’ does. allow you to do that.
Where UID Can Be tracked back in the Shopify customer data And you can also track Individual Customer Journeys
You Can also Look at Product Behavior by UID
