I have changed my logo in Shopify Theme settings, but my Favicon has not updated on mobile–it is my old logo.

I checked on mobile and saw that the favicon has changed to match the one on desktop. You might be experiencing a caching issue. Try clearing all your browser data and then revisit the website to see if the issue is resolved.
