Variant Dropdown - how to make sure a customer chooses an option - Dawn theme

I have a client who sells crochet patterns and for her products, you can choose from a dropdown whether to have UK terms or US terms. Often this dropdown gets missed and people end up accidentally purchasing the UK terms product.

What we’d like to do is add a “-” that appears first but you are still forced to select from the dropdown and choose either UK terms or US terms.

If anyone is able to assist with achieving this, it would be greatly appreciated! We are using the Dawn theme.
