Let me be honest with you. Good ad performance never depends on the theme. Even if you purchase the best theme in the world and still your website isn’t built professionally and slows the speed because of third party apps then your ads won’t perform good as well.
Personally I have seen people with Dawn theme make thousands of dollars, just because they setup the website professionally and knows when to run ads on it.
The features you’re looking for can be custom coded in your current theme as well if that’s why exactly you’re switching the whole theme just for those features then I suggest don’t.

Just because a theme comes with a certain feature like a countdown timer, doesn’t mean it would be a good fit for you. Could look hideous. Could be the best thing for your store. Only you can tell that. What others experience in terms of what works for their conversions in their stores, isn’t going to mean anything, and it’s certainly not going to be a testament for your own store.
I have a paid theme that has all the bells and whistles, and I still had to change it around and fix the features and make them to how I want them to look and interact with the customer.
Is it going to replace all your apps? Only you know that. If you have a theme that comes with something, try it out. See how it works and looks. If you like the app better, then the answer is obviously going to be a no.
I totally agree that no theme is “perfect” and everything needs adjustments.
My main concern is actually reducing complexity and app dependency.
Right now I’m using multiple apps (countdown, popups, upsells, etc.), and I’m trying to simplify my setup without losing conversion performance.

The bulk of the questions have nothing to do with any one specific theme but your level of experience in operating a website or hiring someone who knows what they are doing.
Use a free theme go through the motions , rinse repeat or delegate.
Why, give an actual business case or get rid of things are massive user annoyances.
Every case can end up differently and a real business will go through several themes till the merchant learns what they are doing or delegates.
