The easiest way to do this is to create new collections. You can add certain items to your collections manually, but you can also automate collections.
For example - this is how I set SALE collection:
- I create a new collection
- I set automation that “if the compare at price is not empty” it adds a product to a collection. Since all products that are on sale will have compare at price, this automation will add all products that are on sale in this collection.
- Inside Online Store → Navigation I add it to the menu. Also inside Online Store → Themes → Customizer I add it to the home page
