You’ve already listed the main ones. The URL routing of /products/, /collections/ not editable on Shopify.
You can create new MetaObject definitions, but that’s a developer-level customization. This would be creating a new CMS object type for say /authors/ if you were a book shop and wanted a unique page type or template or site structure to better handle this.
