If you add a payment gateway to your store and your bank is based in the UK and you use Shopify Payments, customers from the UAE will be able to pay via credit cards, that shouldn’t be a problem. I think you need to use UK payment gateway in your store as your website or business is based in UK. If you are expanding business to UAE, then you need business trade license, bank account and then only you will get local payment gateway.
