What's the impact of inventory tracking options on Google Ads?

There are some products in our store that we supply by special order (back order). We want these products to always show up as in stock, both on our website and on our Google Ads. So, what difference does it make when a product is “Do not track inventory” vs “Track inventory (Inventory: 0) +
Continue selling when out of stock”? Does any of these two options have different effects on whether a product is pushed into Google Ads?

I understand that you have some products that are special orders, which you want to appear as in stock and continue to sell them without inventory restrictions. While there are different use-cases for inventory tracking, I can provide an example using the information you’ve shared.

If all of your special orders or back ordered products and its variants do not have any limitations, then you can likely skip the inventory tracking. However, you will also want to check your sales channels as some may require you to track inventory, so you may need to enable inventory tracking and set up your products to continue selling when out of stock in these instances.

Another example where you may want to enable inventory tracking and set up continue selling when out of stock is if one of the variants from a product group doesn’t have unlimited inventory anymore or has been discontinued. This allows you to set limits to specific variant(s) and allow other variants from the same product to continue selling.

Whether or not you’re tracking inventory should not affect Google Ads. However, as previously mentioned, some sales channels may require you to track inventory so I’d recommend checking with each of the sales channels that you’re selling to.
