Hello I have a general question. Where do I find people that can customize/code stores like this?
Because I feel like that fiver is not the best option for this.

The store your mentioned were using Dawn theme. It is a free theme with designs already available to you. The only thing that I can see was customized is the email sign up, the icons, and the wishlist added. They are using app for wishlist.
Anyway, what I am trying to say is you can easily copy the look of this website with minimal coding. It should not cost you much to hire someone to do the customization for you.
