I am planning to add a custom note field to my cart page. The customer will be required to input some info into the field inorder to complete their purchase.
My question is where will the info the customer puts into the box be stored in Shopify, in the customers section in admin?

What a great idea to add this feature to your cart page for customers! What kind of products are you currently selling?
Have you already had a chance to enable cart notes on your store? If not, I’ll share this resource from our help center on how to set up cart notes. When setting up cart notes, you can locate the cart settings for your theme in either the theme settings, or in a customizable section on your cart page.
Once you’ve enabled cart notes, a customer can select a product, add to cart and leave a note/ input information into the cart field. When the order is placed, this cart information can be located by navigating to your Shopify admin > Orders and selecting the specific order. On the right hand side of the order, you’ll see a section where Notes are displayed.
Another option is an app called Textbox - Custom Text Field. This app allows you to select which specific products your text box should be displayed on and whether it should be a single-line or a multi-line text field. This custom text box is displayed on your product page(s) so that customers can input their information directly from the product page. This app is also compatible with the Online Store 2.0. The information customers input in the text box is directly linked to the customer’s order.
The app mentioned above is a third-party app designed by a third-party app developer. If you require further assistance with integrating this app, feel free to use the Get Support option located on the app page within the Shopify App store.
