I found that once the website showed it as sold out, it wasn’t possible to fix it, even by checking ‘continue selling when sold out’, but if I created a new product and set the inventory quantity before I saved it that it seemed to work. Maybe that temporary workaround will help save you a few hours that I’ve lost trying to work around this issue.
