I customised the Dawn theme to match my branding. I can make changes on the editor and see the different types of pages available. However When I go to the pages Menu outside from the editor, those different types of pages are not showing and I cannot add product pages, cart, or store for that matter. I’m attaching some screenshots.

To answer your question, what you are experiencing is absolutely normal and expected behavior. For further context, the pages you are editing in your Theme Editor will still appear when they are necessary if you will.
For example, the ‘cart page’ and its edits will become visible on your website when you enter the cart section of your store. As a customer that experience would look like > View product > Add product to cart > View cart.
The same goes for product pages, blog posts, collection pages, etc. Based on your second screenshot that looks like a general page you created named ‘cart’. The templates here are generally pre-built and decided on a product or page level. That’s not to say you can’t create new ones or edit existing ones - check out this template documentation to learn how.
