I made a new collection however my items are not in Alphabetical order like all of my other collections and this makes it hard for my customers to find their items.

When creating and managing your collections there is an option within the collection details in your store admin to change the default sort order. This is available on both manual and automatic collections.
If you sign into your store admin, go to Products > Collections > Click on Collection, you will see a sort order drop down menu just above the list of products in the collection. You can change that from it’s current sort option to an A-Z or Z-A sort.
