I have a similar issue. When you try to add more than a quantity of 1 to the cart an error pops up saying there are 1677 in stock (example number) please add less than this. This happens when only adding 2 or 3.

Seems this is a setting of your current theme can you share the theme name you are using.

Interestingly it is not happening on all products. I’ve checked settings on products for tracking inventory and continuing to sell when out of inventory and all settings are the same across all products so can’t find logic on why it’s happening on some and not others.
