When i try to change theme template on the product, It cant change and is stuck on default product option. When i try the same thing on a page, it allows me to change it to other templates. how do i change the product template option?

It looks like you only have one product template on your theme. The other templates showen on the first screenshot is a page templates.

You have to create a new template for the product before you can assign the product to it.
Currently, Maybe your store may have only a default product template that is why the list is not showing up
You can create new template from the customizer and then you can assign it to product
