I have an issue when trying to sort manually into a collection.
Everytime I try to manually sort my items, they all move around freely as soon as I save. The rework appears random on my webpage as well, or at least the back office does not reflect whats online.
Anyone ever had this issue before?

it depends on what theme you are running, some themes specify the order that items are listed and that logic is handled within the collection page template itself, so regardless of the order you set in administrative area, it can be overwritten.
Take a look in the collection grid templates and see if you can see where the orders are being specified
