I have changed my email address on shopify and changed the privacy policies etc with the new updated email. However on the website it still shows the original email even though settings show the updated one?

Where on the website does it still show for you? When you change the Settings, I recommend you also check all of your Online store > Pages as they won’t automatically update based on settings. Make sure to check your Contact Us page, as well as the Footer if you have contact details there.
