The Pixel ID shown here on my Shopify store does not match the one that is showing up in the ad campaign I am trying to start. Does anyone know why this is? Are they supposed to match? If so, how do I fix?

Are you trying to associate your product catalog with your Facebook Pixel? It’s important to note that the product catalog is owned by Shopify. This is the behavior expected when the Facebook channel is connected to any Shopify store. It is not possible (or required) to change the ownership of this catalog.
Because of this, you as the merchant will need to create a separate, self-owned product catalog and add a product ‘feed’ to it instead.
Facebook Pixel is a fantastic marketing strategy as it will help you collect data about your visitors’ behaviors. This will then help with your advertising because once your Pixel has collected some data, you can make good use of it by retargeting and tailoring your ads to specific audiences.
