Our store operates on a .co.uk domain. We recently connected an additional Irish domain (.ie) from a third party host in order to appear more appealing to our customers in Ireland. The irish domain has been on SSL Pending for more than a week now. Hoping I can get some help or advice.

Sometimes the SSL on third party domains does not go through when your domain does not have the right CNAME or A record setup for Shopify. The following should be what you set:
If these are correct, then please also check that your domain does not have a CAA record as those can block the SSL from going through. I would recommend you contact your domain provider and see how you can go about removing that record.
Once you have checked out all of the above, please get in touch with us here and we will see about provisioning the SSL cert for you. The reason I am redirecting you is because at the moment, I am not able to look into your account details through the Shopify Community.
I understand that domain issues can be disruptive for you and your store. You mentioned that you added the .ie domain for your Irish customers - are you also going to be selling in the EUR currency as well as GBP? If you have not yet looked into this, there is a way to set up multi currency so that your Irish customers can checkout comfortably using their local currency.
