I’m trying to link a dropdown description on different product pages to a page that then has information about the product. The problem is each time I try and update a new collections product link it will update all of the products that have previously been set to their own pages.

You would need to create separate product templates for your products to add link for each product in description tab.
What do you mean by product templates sorry? I have different pages set up already for different products, I’ve attached it below. But linking one product to a page then links all products to that page instead of staying linked to what I previously set.
You can create new template for each product from Sale channels > Online store > Customize > click on drop down menu at the top, Products > Create template
