I created a metafield for products called sizing chart, for the product ‘copy of sophie dress’ only
i have the metafield pulling from a page but when i go to 'insert dynamic source ’ its not there..

Text types of blocks only show dynamic sources that themselves are also text types.
A page is an object not simple text.
If the metafield is a page reference you need to reference the metafield directly with liquid
i.e. {{ product.metafields.info.size_chart_page.value.handle}} ; adjust to need: namespace(.info) and key(.size_chart_page) and pages object property(.handle or .content or nothing at all)
