Am looking to edit a duplicate of the current theme am good with HTML / CSS so looking to add some static code.
The file I am editing is header.liquid the section is here :
Phone Orders:

If I change this wording on the live theme code it alters immediately when I refresh the home page otherwise on a theme copy it does not refresh on clicking preview.

I am really sorry. Can you further explain what the issue is. I am fonfused what alert you are refering to.
When in Edit code view there is a preview store button when you click this a new tab opens you should see your code changes before publishing using the save button.
On my copied Theme I cannot see any code changes. Why is this ?
Now I understood.
The “Preview Store” button only opens the site with the theme you are editing. You have to save the changes in order to preview them on the live site.
