Hopefully someone can help me out here after a few failed attempts to fix the issue myself:-
Im using the Dawn theme and have just noticed that when I click on “choose options” on the product page, the window pops up but there is no variant button visible to enable the customer’s selection.
Please help! Much appreciated!!

Please check that the variant picker block is enabled under product information. It shows that there are purchase options on the collection page, but not on the product page so I am guessing that is the problem. Otherwise it could be an issue with the theme file code.
To ensure the variants are set to visible do the following:
Online Store> Themes> Customize> Product Template (from top dropdown)> Variant Picker (make sure eye icon on the right is visible)> Save

I am having the same issue; however, my variant picker icon is on. Customers can not select the variant they want.
