If I want to work on a shop, like change the theme and some other changes without affecting the current version that is online.. How would I generally do this. I come from a Wordpress background and have no idea how to do this in shopify. After I am done editing I want to switch the version to the newest one.

If you want to make changes to theme then you could make a copy of current one (Online store → Themes, then click “Actions” on the live theme and then “Duplicate”). After that you can make changes on duplicated theme and make it live when everything is done (Actions → Publish). If you want to see changes for the theme copy without publishing, choose Actions → Preview
Unfortunatelly there is on way to make a similar copy of all store (including payment settings etc). But yo can make a separate development store and import/export products from the original one
