This sounds like the confirmation email that is sent when you request the erasure of your customer’s personal data. This is typically done by going to Customers in your Shopify Admin, selecting a specific customer, and then clicking Erase personal data. You can read more about GDPR data requests here.
Since you haven’t requested this I would recommend speaking to our live support team here.
