I am new to shopify, so I am having problems in implementing google conversion tracking. I am used to wordpress so i can add in the code pretty easily. However i am stuck when it comes to shopify. I followed shopify documentation but then it hit me when it comes to adding the event snippet. There is no check out page. Anyone can help on where is this check out page? I went through all but i just cant find it.

My only question is-If i have already installed GA in my preferences tab, do i follow the shopify documentation instruction https://help.shopify.com/en/manual/promoting-marketing/analyze-marketing/tracking-adwords-conversion... or should I do what this youtube suggest, that is to paste the google tag code in the checkout page?

Having Google Analytics installed in the preferences of your online store is completely different to Google Ads tracking. You can follow Shopify's guide that you linked to or I have written one that often leads to more accuracy for stores.

Just one question- according to the shopify docs you should add the google ad tags between <head> </head> of the theme. however you mention to paste in the checkout page together with the event snippets. If i follow your method, do i still have the google tags between <head> </head>?
It is considered best practice to use the global site tag site wide. Google advise it, but that always seems to be in the context of no pre-existing analytics tags being setup. If you're using Google Analytics through Shopify, which we have done plenty of times, and installed the Google Ads snippet on the checkout, we haven't encountered any issues.
