Based in US, helping set up a Canada-based store

We have a US-based Shopify store and we're starting a new store exclusive to Canada. I'm not looking for tax advice or anything.

My question is, for the purposes of exchange fees, does it matter whose personal info we use to apply for Shopify Payments?
