Changing the text / translation in address2 field

In checkout when customers enter their address, shopify shows a text in each box, for example 'address', 'city' 'region' etc.  

It is also possible to customise whether or not the address2 field appears, however what I cannot find is any way to change the text that appears in the address2 box which is currently (in English): 'apartment, suite, etc.' for a compulsory address2 field or 'apartment, suite, etc. (optional)' if you have the optional address2 field enabled.

The problem we have is that this text is appears to be aimed at north American customers where addresses have this specific format.  We are finding UK and European customers frequently DO NOT USE the address 2 field because it says 'apartment/suite' and I believe they don't realise they can enter any second address line, at the very least this text is discouraging them from using line 2 for other parts of their address such as the sub-area where they live.

This is a problem because there is also no easy way in shopify to restrict any address field to say 35 characters so this will fit on a shipping label.  We are getting large numbers of customers entering very long addresses in line 1 of the address, and then we have problems when the address won't fit on the shipping label.  The problem is particularly bad for customers from continental Europe where the custom is to put the door number after the street name, so if the end of the line gets missed off, we are finding the order just doesn't get delivered.  Ideally we'd like to restrict all the address fields to 35 characters but I have spent a long time looking at how to do this and can't see a way to do it.  The next best option is to stop discouraging customers from using line 2 - so I'd like to change this text to something more generic like 'address line 2 (optional)'.

I have been into the theme but cannot see how to edit this text - you can translate it into another language but it doesn't seem possible to edit it.  In the box in the theme where you can normally type in your own text, the words 'apartment, suite, etc. (optional)' are greyed out so you can't just type in your alternative.

I agree, however I managed to change the wording under the edit languages setting. 
 
For me the issue with Shopify is the inability to format delivery by postcode.

thank you - can you remember how you did this?  I have tried going into edit languages but it doesn't let me edit this label, it's greyed out.  (I have edited other bits of text using this setting but the text wasn't greyed out, so you could delete and edit it.)

I thought exactly the same when I saw it greyed out but just tried typing in this week and I managed to change a load of things I hated.
