I made a mistake and deleted my Instagram Sales Channel app. Is there a way to reinstall it? For some reason I  no longer see it in the Shopify App Store.

Since the release of the new Facebook channel, the Instagram sales channel is no longer available to install through the Shopify App Store.

While you won't be able to reinstall the old Instagram sales channel, you can use the new Facebook channel both to use the Instagram Shopping feature and sell on Facebook. Do you have a Facebook Page for your business as well?
