May I ask why you are wanting to deactivate your checkout? This will stop all customers from being able to purchase products from your store.
You do have the option to hide your Add to cart buttons on your storefront and reveal them again in the future. You will need to edit your theme HTML in order to make this change. You can follow the tutorial below for step by step instructions:

We always suggest you first duplicate the theme and work in the duplicate. That way you can always go back to your previous version.
If you've changed theme files and need to revert them, you can roll back .liquid files individually to a time and date before you made the changes.

If you were wanting to stop selling for a while, we have a few other cost-effective options available:
Pause and Build plan allows you to pause your store and continue to work on it at a reduced cost of $9USD a month. You can still access your admin and work on your store, but your checkout will be disabled. Meaning customers can see your website and products but will not be able to purchase them. For more information on our pause and build plan please click here.
Fully Pause your store. This option pauses your store entirely for up to 3 months at no cost. You will not be able to access your admin nor will your website be visible. Your store will essentially be stopped until you reactivate, or when the 3 months are over and you are automatically switched to the pause and build plan. For more information on the full pause plan please click right here.
Note: To be eligible to pause your store using either Full Pause or Pause and Build, your store needs to be on a paid plan and at least 60 days past the free trial period. If your store doesn't meet these criteria, then you can't pause your store.

Is Shopify going to implement an option to freely turn off/on your checkout? At present there is no simple way to do so, reason being;
Time off - we want the ability to just turn our store off for a week, so that we can take time off and I don't find the Pause & Build function actually caters toward this requirement, nor does adding a password to the store.
I want customers to still be able to view my store and I will put a clearly visible message on the website that says "We're away until 'x' date, checkout will be unavailable until 'x' date, but feel free to browse"
Can you please advise if Shopify plans on adding such feature in the near future?

Thank you for providing context around why having this feature will benefit you as a store owner.
I will go ahead and submit your request to the developers as a feature update for the Shopify platform. It's not an immediate and guaranteed solution, however, we do consider your suggestions when we release updates on our platform. Updates will be published on our Shopify Changelog page:
At this point in time, the current workaround is to implement the storefront password but if you were wanting to keep your store open to the public, I would suggest adding an announcement banner to your home page stating that you are on a break and will be fulfilling orders on said date. Secondly, you could adjust the wording in your shipping settings to note "will be fulfilled on x date" to ensure customers are aware of the delay. I have seen multiple stores use this method successfully.

Hi Moira, I have a question about pause and build plan. I want to use Shopify not only for E-Commerce, but also for information pages without checkout.
As I can see, pause and build let my customers acces my store, but they will not get to checkout. This can be useful for information sites.
This means that, beside the checkout, also the cart button will not appear?
Also, about payment, I will have to pay 2 full months first? Or is there a way to pause and build since day one of activating store?
Keep in mind that I will develop the store from my partner dashboard.

Hey @samirgharib!
When you enable the Pause and Build plan, your customers will not be able to reach the checkout page. However, the cart button will still appear on your store, allowing customers to add items to their cart. They just won't be able to complete the checkout process.
To select Pause & Build, your store must be on an active plan with the first invoice paid.

Hi Moira, thanks for your answer.
I am having trouble to create a information site in shopify without cart and checkout. I supposed the pause and build plan could help, but as you say, the cart will still appear and it will not be the best.
Here are a couple of sample stores, created with shopify, that aren't showing the cart button.

Thanks for providing further context, I see what you are after! Shopify is predominantly used for ecommerce, so you would need to manually adjust the code within your theme to remove the cart buttons etc. It would make more sense to use a website builder such as Wordpress.
