Trying to understand the plan costs it has a flat monthly fee of say $105 or $299, and i'm reading that if we use their payments there are no other fees other than the credit cart fee of 2.6% + 30¢ USD online

The flat monthly fee you're referring to sounds like our monthly subscription fee as listed in our pricing page here. If you scroll down on that page and click on the Compare plan features button, you can navigate to the Shopify Payments section on that table and view the most accurate credit card rates for your region. If using our Shopify Payments gateway, these are the rates that Shopify will charge for orders processed using our native payment provider, meaning that you'll only be paying these credit card rates without any additional third-party transaction fees.
Keep in mind that if you plan to sell internationally, the online credit card rates for international transactions would look different in comparison to processing orders when a local card is used. The rate for this is also available within the same Shopify Payments section on the pricing page I linked earlier.
Apart from that, other costs that may be associated with your store can be found in this help guide. I recommend having a thorough read of it to ensure that you're well aware of other potential fees that may be charged to your account.
