So we ran a sale on my website (oldfashionedgolf.com) from 20 May to 31 May...made a couple small changes to set Products to 'Draft' on June 1st...and have not touched it since. And yet our site speed score is dropping every day by 2-3 points! Does anyone have an idea what could be causing this?

It's common for the score with that tool to change randomly, it's an emulated testing tool so not possible to get exact readings.
They also made a change recently which affects scores: https://developers.google.com/speed/docs/insights/release_notes.
The tools my team (speedboostr.com, the Shopify optimization team) use are:
- Shopify Analyzer to see what can / should be optimized on a Shopify site (some of the Google PSI recommendations can actually lead to a lower user experience, so we focus on what's best for ecommerce sites).
- WebPagetest.org to get more accurate readings of site speed and compare before / after you make changes or install apps.
The speed score is not correlative to actual page load speed, so generally don't put too much weight on it, but if you're concerned with the speed score, your best place to start is by analyzing your apps, making sure there isn't unnecessary app code loading, and have your developer recreate app features directly into your theme when possible.
