None of my collections are being indexed by google, it keeps on selecting the collections/all as the canonical. I've tried using an app to add declare user-canonical for the pages, I've blocked the collections/all from being indexed and I've added 2,000 word content to each of the collection pages but it's still keeps on saying collections/all is the canonical and won't index.
Has anyone got any ideas on how I can get them to index? My site is: lavayourstyle.com

I never heard of that issue, and I can see that your collections have different URLs and names.
Can you provide a screenshot of the error from the search console?

The problem is that you're using the rel=“canonical” tag wrong.
By using the rel tag this way, you're telling the search engines that all the collection tags have the same content, because you have the same tags on every collection page.
With the rel tag, you link from a duplicate page to the original. But you used the tag on every collection page.
I would remove all rel tags, have Google re-index the pages, wait a bit and check again.
Your error should then be gone and your pages indexed.
