Auto assign / change a products layout depending on stock levels?

Just wondering if there is anyway at all of auto assigning an existing product theme template to my products?

I know we can bulk edit our products through the products section within Shopify, but what we would ideally like is a rule written so that if a product drops below “0” in inventory, the product layout alters to a second layout. I would also want us to be able to override and manually alter the theme for each product to.

The reason for this is because when our new internal stock system goes live later in Feb, it will output a database every few hours that will be uploaded to Shopify in the background automatically to keep our website stock as accurate as possible.

Our store currently uses mainly two different product templates to show a different stock status, and our idea is to impliment a way that when ever the stock level drops to 0 or below, customers can continue to purchase the item with out the store showing a “Sold out” status or “In stock” if it is actually going to be dropshipped from the manufacturer.

I’m also looking to accomplish the same thing - I’m on Shopify Advanced, and have been investigating how to use tags/metadata further, but so far haven’t found a good solution for this other than configuring notifications so myself or my team can make the change manually. I’ll let you know if I discover anything!
