Hi, I have 16 collections in my store and each has its own collection template in the Dawn theme.

My question is, which is the better place, for SEO, to put my collection description? In the Theme - Customise - Collection Page - Rich Text or in Shopify Dashboard - Products - Collections - Description.

I suggest you put the collection page description from the Shopify Dashboard Collections page directly, as it is more convenient for you to edit the content and has a better sight of view to do further optimization like adding H1 or H2 tags as well as attaching images or videos.
