As far as Shopify specific resources, you can check the Shopify App store here for photo optimization and photo resizing apps.
Outside of that, it really just depends on what you have available to you as far as resources and skill-sets. Images can be hosted in the Shopify File section located in your admin, or on a third-party hosting site.
Taking photos can be outsourced to a photographer or you can use some guides to learn how to take your own - all with a smartphone camera! Shopify even offers a free course on exactly this -check it out here.
As far as organization, depending on the number of products you manage, you may want to consider hiring an Expert to guide you or lend a hand with the process.
