You can limit the access that collaborator accounts have to your store, for example, you can choose to disallow them from having access to your online store/theme if you are concerned about this. You can read about staff permissions and access in detail here. With that being said, if you are looking to hire people to help you out with your store I would definitely advise checking out the Shopify Experts Marketplace, as the people here have been vetted and so it would be a lesser risk than using the likes of Fiverr for example.
