Not sure if I am missing this in the theme editor for the theme Sense. Curious if I can change the color or opacity of the highlighted grey part of the drop down menu.

Sense has some theme options to change menu colors(see image below)…
Problem is that this changes everything, both header and submenu. Plus you are limited to only 4 color options…
Other option would be adding custom color options to via liquid
