Anyone know if I can do a trial of a shop without first registering my biz? I hate to get legally encumbered unless I can expect some success

That would probably depend on where you’re located, and then the type of business that you are. You should consult a local tax expert in your area for a real answer (don’t take the word of folks on the forums here).
With that said, in Canada, I believe if you’re doing business under your own name (not a business name) then you wouldn’t need to register the business.
And then for tax purposes, you wouldn’t need to start charging taxes until you’ve done $30,000 in sales.
But again, please do not take my word on this. You should absolutely consult a local tax professional from your area, as the rules and laws are different, depending on where you live and what type of business you’re running.
