We have a sports company where registration for events is our product. Not physical inventory. We have everything built into our website and back end database. We currently have a custom shopping-cart/Checkout process but would like to use shopify-cart/checkout process. Can we use only this part without creating a shopify Store.

But you can try the Shopify Buy Button,
In this you Don’t Need to created Shop.
