We are finalizing our privacy policy and would like to ensure that Shopify releases us from sharing our customers’ personal and commercial data, which they would not agree to in doing business with us. Is that an issue to Shopify? how can we get confirmation from Shopify to release us from sharing our customers’ data?

Thank you for reaching out about this! I can definitely understand the importance of controlling your customer data on behalf of your customers and ensuring that any unnecessary information is not shared with your website host.
Officially speaking, Shopify is “data processor” and “service provider”, meaning we do collect and process data as well as provide ecommerce services.
TLDR - Shopify does collect some data from both the merchant account and customers that purchase from your store. There is no way around this as it is how the platform is built.
I strongly suggest reviewing our data privacy policies and privacy addendum for more information on this.
